Orange blossom, a small white flower high in perfume, is a product of the bitter orange tree (sometimes referred to as Seville orange tree). It is very precious and very expensive because one tonne of flowers is needed to produce one litre of EO (called \u00abNeroli essence\u00a0\u00bb).<\/p>\n

Less expensive but also very effective, the floral water (or hydrolat) is gathered during the distillation. It contains also active aromatic molecules but less that the EO. When passing through the flower, the steam \u201cgrabs\u201d certain volatile molecules. In the cooling process condensation takes place and returns to a liquid form while the steam or vapour separates into two phases: on the surface the oily phase, the EO, and at the bottom, the hydrolat. This is what gives the orange blossom floral water all its soothing and regenerating properties. It is also highly appreciated in the kitchen.<\/p>\n
